Lavare la rucola e i pomodorini datterino gialli. Affettare la mozzarella fior di latte. Saltare e salare i funghi in padella. Tagliare in due il Saltimbocca e infornare in forno preriscaldato per 3/5’ min a 250 C°. Sfornare e condire mettendo prima la rucola, poi la mozzarella, funghi e pomodorini. Per ultimo capocollo, scaglie di Mandorle e olio extra vergine d’oliva.
