Wash the rocket salad and cherry tomatoes and cut them in half. Cut provolone (cheese) into slices. Bake in the preheated oven for 3/4 minutes at 250°. Take out of the oven and stuff the panzerotto (bread) first with rocket salad, then with mortadella, semi spicy provolone (cheese), peppers compote, yellow cherry tomatoes and finally extra virgin olive oil.
